Yellow split peas are nearly identical genetically to their green counterparts. Both have similar flavors, nutritional content and cooking time, though yellow split peas tend to have a milder flavor than their slightly sweeter, green counterparts (as per a Cornell University study.) Split peas are a high-protein legume, rich in fiber and packed with vitamins and minerals. They are a great source of fiber and help manage your blood sugar levels. A single cup of split peas provides 65 percent of your daily fiber needs. They’re also a great source of protein, offering 16 grams in that same cup — and only 231 calories.
These humble legumes also have some mighty vitamin powers: 12% of your daily vitamin K, 25% of your thiamin
32% of your folate needs. Additionally, the thiamin and high fiber content found in split peas help manage blood sugar. Thiamin supports heart and brain health, as does folate.
FOOD STORAGE RECOMMENDATION: Studies recommended 60-80 pounds of beans and legumes per adult/per year as part of a balanced subsistence diet. The Mylar is heat-sealed (which makes the bag re-sealable). The sealed Mylar will stay air-tight if it’s not punctured. Because it is re-sealable you can snip a corner off the bag, pour out as much product as you’ll use in the next few months, then quickly* re-seal the Mylar and send your food back into long-term storage. The oxygen pack should continue to do its job as long as you re-seal the Mylar as quickly as possible. IMPORTANT: If your bag is left open for more than 30 minutes, you will want to toss in a new oxygen pack before re-sealing to ensure long-term freshness. If you have opened and re-sealed multiple times, and want to store the remainder for many years, you will want to put in a new oxygen pack.
