White Beans, or “navy beans” are awesome in soups, salads, chilis, and even custard pies! White beans found their place as an important source of nutrition to the Navy during the second half of the 19th century (thus the name). As a nutrient-dense and fiber rich food, the navy bean is considered both a vegetable and a protein food, making it a healthy addition to your diet. Their high protein content means they can serve as an alternative to meat in your diets. Each half-cup of cooked beans contains 7.5 grams per cup. While this protein is incomplete — missing 1 or more amino acids you need in your diet — a well-rounded diet will protect you against an amino acid deficiency. A serving of cooked navy beans contains 9.6 grams of fiber, meeting 38 percent of your daily value for fiber. Additionally they are rich in magnesium and folate.
NUTRITION INFO: White beans are the most abundant plant-based source of phosphatidylserine (PS) yet known. It contains notably high levels of apigenin, which vary widely among legumes (Apigenin is a common dietary flavonoid that is abundantly present in many fruits, vegetables and Chinese medicinal herbs and serves multiple physiological functions, such as strong anti-inflammatory, antioxidant, antibacterial and antiviral activities and blood pressure reduction.) Consumption of baked beans has been shown to lower total cholesterol levels and low-density lipoprotein cholesterol (the bad one). This might be at least partly explained by high saponin content of navy bean. Saponins also exhibit antibacterial and anti-fungal activity, and have been found to inhibit cancer cell growth. Furthermore, the navy bean is the richest source of ferulic acid and p-coumaric acid among the common bean varieties.
FOOD STORAGE RECOMMENDATION: Studies recommended 80 pounds of beans and legumes per adult/per year as part of a balanced subsistence diet. It is good to have a variety, of course, but White Beans are so great in so many recipes. Our 4-gallon heavy-duty stackable square buckets are strongly recommended for storage purposes!!
